My grandmother came from Tsui Hang a small fishing village in Hong Kong, here she came up with her own unique salt & pepper seasoning made with local Chinese spices bursting with flavour for that moreish taste.

She experimented with her seasoning from fish, ribs, chicken and even squid, always looking to create exciting dishes in the wok.

My father use to love the taste so much that when he moved to the UK he decided to implement it into his own takeaway dishes, from her salt & pepper ribs to even her salt & pepper squid.

More recently he decided to use it on chips, which has become a huge success, around England they call it salt & pepper chips!

 

I believe my grandmas original salt & pepper recipe is the very best, it's a careful balance of five spice, aniseed, white pepper , salt and garlic with a hint of spice to give an umami flavour that is irresistible.
